Ingredients

1 clove garlic smashed with pinch of kosher salt & EVOO

4 anchovy fillets

2 egg yolks

1 Tbsp Dijon mustard

2 lemons, juiced

2 Tbsp water

1/2 cup EVOO

1/4 cup fr sh grated Parmesan plus extra for garnish

Black pepper

2 heads romaine lettuce


Directions

DRESSING: Smear garlic over inside of bowl. Put anchovies, egg yolks, mustard, lemon juice & water in blender & blend 30 seconds. With blender running pour EVOO in slowly to emulsify. Stir in Parmesan & a pinch of salt & pepper. Put lettuce in bowl, add dressing & extra Parmesan cheese.
