Caf� Rio Pork Barbacoa

Ingredients

1 pork roast (4-5 lbs)

2 cloves minced garlic

3/4 cup Coke (not diet)

3/4 cup ketchup

1 cup brown sugar

juice from 2 limes

1 can green chilies

1 recipe Black Beans

1 recipe Cilantro Lime Rice


Directions

Put pork in crock pot, top with garlic and coke, cover and cook on low for 8 hours (high 3-4 hours). Shred pork with 2 forks. Mix last 4 ingredients together and mix into pork. Cook on low for 30 minutes.
