1 bn Green onions chopped

2 ds Tabasco sauce

1 ts Cajun spice mix see

1 Yellow onion chopped

1/4 c Green chiles canned

1/4 c Fresh cilantro sprigs

1 16-oz can Stewed tomatoes * see Note

2 cloves Garlic crushed

1/2 lb Mushroom cleaned & Sliced

Directions

Preparation Time: 0:25 Saute the onion, green pepper, scallions, garlic, and mushrooms in a small amount of water for 5 to 10 minutes. Add the remaining ingredients (except for the rice) and mix well. Stir in the cooked rice, heat through, and serve. NOTE: Some Commerical Cajun spice mixes are now available. To make your own Cajun spice mix, combine 3 tablespoons paprika, 2 teaspoons onion powder, 2 teaspoons ground black pepper, 2 teaspoons ground white pepper, 2 teaspoons cayenne, 1 teaspoon ground dried oregano, 1 teaspoon ground dried thyme, and 1/2 teaspoon celery seed. Mix together and store in a tightly covered container. Makes about 1/3 cup. NOTES : I added 1 cooked link of turkey kielbasa, sliced and 1 cup precooked, frozen shrimp. Tasted just like jambalaya!! Also used Lusiannes Cajun Spice. Recipe by: Unknown Posted to T.nt (sdm-marked) - Prodigys Recipe Exchange Newsletter by "Francis X. Castellano" <fxcastel@nps.navy.mil> on Jul 12, 1997

Great tomato and spice flavour in this rice mixture. I will be making this one again. Served it with chicken legs using the spicy cajun style buffalo wings recipe #63518
