Caribbean Black Bean Salad

This salad packs a punch of protein and nutrients. For a quick weeknight meal, you can rely on pre-washed greens and roasted chicken. Slice avocado just before serving.

Ingredients

Sliced chicken breast (baked, grilled, or roasted)

Black beans rinsed and drained

Mango cubed

Green onions thinly sliced

Avocado slices

LIME VINAIGRETTE

3/4 cup olive oil

2 large limes zested and juiced

2 tsp cider vinegar

fresh cilantro leaves

2 tsp honey

salt and pepper to taste


Directions

Combine all salad ingredients. Drizzle with Lime Vinaigrette. Lime Vinaigrette: Combine all dressing ingredients in food processor. Puree until smooth. Refrigerate any leftovers.
