Carnival Cruise Chocolate Melting Cake

Ingredients

8 ounces Chocolate chips

1 cup Butter (2 sticks)

7 Eggs

6 tablespoons sugar

1/2 cup Flour


Directions

Preheat oven to 375 degrees. Melt chocolate with butter, stir and allow to cool for about 10 minutes. In a separate bowl, mix 4 of the eggs with all the sugar and whisk until blended together. Add the flour and whisk again until blended. Add remaining 3 eggs and whisk again. Combine the egg mixture with the chocolate mixture. Pour into individual ramekins or baking cups. Bake until just done, about 10-15 minutes, depending on the size of the baking cups/ramekins. Interior will not be set, but edges will be. Sprinkle top with powdered sugar if desired. Serve with vanilla ice cream. Makes about 8 servings.

JOEL's NOTES: This was a special dessert that Joel, Mashella, Sarah and Hannah all enjoyed on the K-Love Cruise in January 2009. It was served in ramekins about 2 inches tall, and 2 ? inches in diameter (across the top). When Carnival set them out to serve them, they were usually on a cookie sheet that had edges, and the sheet had water in the bottom of it. This recipe didn't say to cook them that way, but I know some cr?me brulee recipes say to cook it that way, so you can try that if you don't get the desired results. The first time we tried it, we used a cupcake pan and paper cupcake wrappers for some, and they cooked all the way through, so Ramekins or other small baking dishes work better. 14 minutes was just about perfect for the ramekins the size that Carnival used. If you want more liquid centers, then cook a little less, or cook longer if you want less liquid centers. This is a recipe that may require some experimentation with how long to cook depending on the bowls used. [I posted this recipe.]
