Carob NM Zia Mints

This is a SPICY after dinner mint that adds a perfect finish to a fine southwest style dinner (Mexican or New Mexican)! OR it can be used to stimulate or whet the appetite for said southwest dinner.

Ingredients

Zippy Zia NM "Crunch"

1/2 cup finely ground nut mixture (nuts like: almond Brazil, coconut, macadamia, pecan, pine (pinon), walnut, etc.)

2 tsp. chipotle

1 tsp. Zia Zip (see Recipe)

Carob "Chocolate" Mint

1/2 cup carob chips sweetened with beet "sugar"

2 tsp. coconut oil

1/4 tsp. 100 percent pure mint oil (cinnamon peppermint, spearmint, wintergreen, etc.)

Optional

Suggested garnishes: sliced almonds chopped coconut (OR almond, Brazil, macadamia, pecan, pine (pinon), walnut, etc.)


Directions

Grind nut and spice mixture finely using a coffee mill or similar grinder. Melt carob chips with mint oil and coconut oil in a small double boiler on medium heat. Mix in ground nut/spice mixture. Drop by the teaspoonful into bottom of confections candy cups or onto waxed paper (OR the tablespoonful for a little larger mint). Chill 10 minutes in freezer. Bag and keep refrigerated
