Grind nut and spice mixture finely using a coffee mill or similar grinder.
Melt carob chips with mint oil and coconut oil in a small double boiler on medium heat.
Mix in ground nut/spice mixture.
Drop by the teaspoonful into bottom of confections candy cups or onto waxed paper (OR the tablespoonful for a little larger mint).
Chill 10 minutes in freezer.
Bag and keep refrigerated
