Carrot Cake

Ingredients

3 cups grated carrots

4 Eggs

2 cups sugar

1 1/2 cups vegetable oil

2 tsp vanilla

2 cups flour

2 tsp baking powder

2 tsp baking soda

1 tsp salt

2 tsp cinnamon

raisins


Directions

Combine dry ingredients, set aside. Beat eggs, sugar oil and vanilla just until incorporated. Sprinkle dry ingredients & beat till smooth. Fold in carrots and raisins. Bake @ 50-60 minutes.
