Carrot Cake

Ingredients

1 teaspoon salt

2 cups flour

2 cups sugar

2 teaspoons baking soda

2 teaspoons cinnamon

1/4 teaspoon cloves

1 teaspoon allspice

3 each eggs beaten

1 cup oil

1 1/2 teaspoon vanilla extract

2 cups grated carrots

1 cup crushed pineapple

1 cup applesauce (optional)

1 cup dates (optional)

1 cup nuts (optional)


Directions

SIFT TOGETHER THE SALT, FLOUR, SUGAR, BAKING SODA, CINNAMON, CLOVES, & ALLSPICE. IN A SEPARATE BOWL BEAT TOGETHER THE EGGS, OIL, AND VANILLA. COMBINE THE EGG MIXTURE AND FLOUR MIXTURE AND ADD THE GRATED CARROTS AND PINEAPPLE. ADD ANY OF THE OPTIONAL INGREDIENTS. POUR INTO A GREASED BUNDT PAN AND BAKE @ 350 FOR 45 MINUTES TO 1 HOUR. LET COOL AND THEN REMOVE FROM PAN. COMBINE 3 OZS. SOFTENED CREAM CHEESE, 3 TBSP BUTTER, 1/4 TSP VANILLA, 3/4 CUP CONFECTIONERS SUGAR. BEAT UNTIL SMOOTH AND FROST YOUR CAKE.

Made per recipe. Very wet batter (even after draining pineapple) and the "8 carrots" direction is not helpful considering the range in size of carrots and the varying amount of shredded carrot you would get. Also had to add almost 3/4 cup of milk to icing just to take it from a paste to something you could ice the cake with. Will not use this recipe again.

Fantastic cake!!! So moist! Cooked for minimum amount of time and didn't add nuts or dates.
