Ingredients

1/2 pound Ground beef

3/4 cup carrots shredded

3/4 cup Onion chopped

3/4 cup Celery diced

1 tsp Basil dried

1 tsp parsley flakes dried

4 tbsp butter or margarine divided

3 cup Chicken broth

4 cups Potatoes peeled and diced

1/4 cup All purpose flour

8 oz processed american cheese velveeta, cubed

1 1/2 cup Milk

3/4 tsp Salt

1/4 - 1/2 tsp Pepper

1/4 cup sour cream


Directions

In 3 qt saucepan, brown beef, drain, set a side In same pan, saute onions, carrots, celery, basil, parsley in 1 tbsp butter until vegetables are tender (10 min) Add broth, potatoes abd beef and bring to boil Reduce heat, cover and simmer until potatoes are tender (10 min) Meanwhile, in a small skillet, melt remaining butter. Add flour and cook and stir for 3 to 5 min or until bubbly. Add to soup and bring to boil. Cook and stir for 2 minutes. Reduce heat to low, add milk, cheese, salt, pepper and cook and stir until cheese melted. Remove from heat and blend in sour cream
