Cheesey Potatoes

Ingredients

30 ounce bag hash browns (shredded thawed)

16 ounces sour cream

1. 10.5 ounce can cream of chicken (or celery or mushroom)

1/4 cup melted butter

1 tsp salt

1/2 tsp pepper

1 1/2 cups shredded cheddar cheese (more if desired)

1 1/2 cup shredded mozzella cheese

2 sleeves of ritz crackers (crushed)


Directions

1. Preheat oven to 350°F and butter a 9×13" baking dish. Set aside. (Make sure your potatoes are mostly thawed and drain any excess water.) 2. In a medium-sized bowl, combine potatoes, sour cream, cream of chicken, salt, pepper, 1/4 cup melted butter, 1 sleeve of ritz, and shredded cheese. Stir until combined. 2a. Melt 4 tbsp of butter and stir in 1 sleeve of ritz for topping 3. Spread into the baking dish. Top with extra cheese and ritz. 4. Cover with foil and bake for 20 minutes. Take foil off and bake an additional 10 minutes. It should be golden brown and bubbling hot. Let rest for 5 minutes before serving. Then enjoy while warm!
