1. Preheat oven to 160 degrees. line 2 large baking trays with baking paper.
2. Combine the egg whites, vanilla and salt in a large bowl. Beat on medium until stiff peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high until the mixture is shiny and stiff peaks form.
3. Gently fold in the coconut.
4. Place heaped teaspoonfuls of the mixture onto the trays, allowing room for speading. Bake for 20 minutes. Cool on trays.
