Chicken and White Bean Chilli

Ingredients

1 teaspoon Olive oil

2 whole Yellow onion Chopped

4 whole Garlic cloves Minced

1 pound Chicken thighs Boneless, skinless, cut into small pieces

1 pound Ground chicken Lean

1 can Green chilies Chopped

1 teaspoon Ground cumin

1 teaspoon Dried oregano

1/4 teaspoon Cayenne pepper

4 cups Chicken Stock Low sodium

1 can Cannellini beans (great Northern beans) White beans


Directions

Heat oil in large pot on medium. Add the onion and garlic until the onion is translucent. Raise the heat to medium high and add the chicken pieces, ground chicken, chillies and spices. Sauté until the chicken is mostly cooked through. Add the chicken stock and beans, scrapping the bottom of the pot to loosen and browned bits. Bring the mixture to a boil and then lower the heat to a simmer. Continue to simmer, uncovered, for 20 minutes. Taste and adjust the seasoning with salt and pepper.
