Chicken, Bacon & Eggplant Pesto Penne

I made this up with things I had on hand and it was delicious. The perfect mid week meal.

Ingredients

2 cups penne pasta

1 teaspoon olive oil

1 teaspoon chilli crushed

1 tin chopped tomatoes

1 small jar eggplant pesto

500 grams chicken thighs cubed

3 rashers bacon chopped

salt & pepper to taste

parmesan cheese to serve


Directions

Cook penne pasta according to packet directions Heat oil in a large frypan and fry bacon, brown chicken then add tomatoes, pesto and salt & pepper to taste. Drain pasta and add to frypan and mix well. Serve with parmesan cheese.
