Chicken Brochettes with Red Bell Pepper and Feta Cheese

Ingredients

5 tb (packed) feta cheese,

1 c Plain non-fat yogurt

2 lg Red bell peppers, cut into

1 1/2 lb Skinless, boneless chicken

2 ts Garlic minced

1/4 ts Pepper

6 10-12 inch long wooden

1 ts Chopped fresh rosemary


Directions

Mix yogurt, 3 Tbs feta cheese, garlic, rosemary, and pepper in a large bowl. Add, chicken; toss to coat. Let marinate at room temperature 30 minutes. Prepare barbeque (Medium high) or preheat broiler. Thread chicken and pepper pieces alternately on skewer. Sprinkle with salt and pepper. Grill or broil until chicken is cooked through, turning occasionally, about 8 minutes. Transfer brochettes to platter. Sprinkle with remaining 2 Tbs feta cheese and serve.
