A delicious variation on a corn and potato chowder. Perfect for a cold or rainy day.

1 tablespoon butter
1/4 pound bacon diced
1 cup Yellow onion chopped
1 each Green pepper chopped
1/2 each Poblano pepper chopped
Kosher salt and black pepper
2 each boneless chicken breasts Poached
1 tablespoon minced garlic
2 tablespoons flour
5 cups chicken broth or stock
4 cups Baking potatoes peeled and chopped
1 1/2 cups carrot shredded
2 cups fresh or frozen corn kernels
1 1/2 cup half-and-half
1/2 teaspoon Thyme (if dried, otherwise 2 single sprigs)
Pinch of cayenne pepper
2 tablespoons Fresh Italian parsley chopped
I used the ingredients above as a guide (omitting the poblano peppers, as my family does not like them) to make the soup, since there were discrepancies between the ingredients list and the recipe instructions. I used rotisserie chicken in the soup, and it was delicious!
brettnleosmomRecipe is different than ingredients?? I added chicken with potatoes. Used gluten free flour. I still used pablanos and everything else and seasoned to taste. Omitted carrots because hubby doesn’t like them. Turned out great!
Alicia_GfamVery good but didnt mention the chicken so i omitted it. Next time i will cook and shred the chicken to add it. Good taste but could have been a little thicker. Adding a little heavy cream helped out.
Sportfan2The link is not remotely the same recipe as posted on BigOven. The recipe from the Food Network is a Corn and Potato Chowder...no chicken, less broth and no Poblano. That said, the recipe from the food network is about average. Cayenne and Thyme are an odd pairing. The recipe on BigOven looks like it could be better.
