Chicken Creole

Ingredients

1 kilogram Chicken boned chopped

8 tablespoon Butter

8 tablespoon Flour

2 cup Onion chopped

1 cup Celery chopped

1 cup Green pepper chopped

1 tablespoon Garlic chopped

1 tablespoon Thyme

1/2 teaspoon Basil

3 each Bay leaf

1 can Tomato sauce

23 fluid oz Chicken Stock

1 tablespoon Brown sugar

4 slices Lemon

2 tablespoon Cajun spice mix

Parsley chopped

1 cup Green onion chopped

Rice cooked


Directions

Saute the chicken in butter for 2-3 minutes. Add the flour and stir over a medium heat until lightly brown. Saute onions, celery, green pepper and garlic until they begin to turn transparent. Add the stock, tomato sauce, thyme, basil, bay leaves, brown sugar, lemon slices and cajun spice blend. Simmer for about 15 minutes. Add green onions, parsley and chicken during the last 5 minutes of cooking. Serve over rice.

Quick and easy to make, after reading the last comment I added only 1 bay leaf. Will deffinately make again.

This dish was very good except that the bay leaves were a bit overpowering. I would reccomend using one or two instead of three. Other than that, every one enjoyed it.

Really smells great when simmering! Made a few changes. Will definitely make this one again!

My whole family enjoyed this dish. Preping the veggies took a little longer than I expected, but I guess thats because I need to sharpen my knives. I will definetly make this again
