CHICKEN in Coconut Milk Soup

Ingredients

.5 container Coconut milk unsweeted- Simply Asia thai kitchen

1 cup Chicken Stock

3 small pieces Fresh ginger

10 oz Chicken breast

1 tablespoon fish sauce

1 teaspoon sugar

1 medium tomato

1/2 medium onion

1/2 medium Red bell pepper

1 tablespoon Lime Juice

1/4 cup Fresh Coriander

1 small Fresh green chilli


Directions

1. add coconut milk, chicken stock and ginger in a pot 2. bring to boil and simmer over low heat for 5 minutes, stir occasionally 3. add chicken pieces and chilli, simmer for 5 minutes 4. season with fish sauce, lime juice and sugar. Garnished with Coriander before serving
