Directions

Preheat oven to 375F. Place boneless, skinless chicken pieces (breasts or thighs) in a single layer in a shallow baking dish. Spread a thin layer (approximately 1/2 cup) of spiced tomato sauce or prepared spaghetti sauce over each piece. Bake chicken for 20 minutes. Remove from oven and spread remainder of the sauce and sprinkle with generous amounts of grated mozzarella. Place back in over and bake an additional 20 minutes or until the pieces are cooked through. Remove from oven and let sit 5 minutes. Serve with steamed veggies, rice, or pasta.
