1/4 Cup Butter

1/4 Cup Flour

1/4 Yellow Onion minced fine

5 pounds Russet potatoes peeled then cubed into small chunks, about 6-8 potatoes

3 1/2 Cups Cooked Chicken cubed (We just buy a rotisserie chicken)

1 Teaspoon Fresh Ground Black Pepper

2 Teaspoons Salt or to taste

1 Teaspoon Thyme

A pinch of Nutmeg

32 ounces Chicken Broth 4 cups if you aren't using a big carton

3 Cups Frozen Corn

2 Small Crowns of Broccoli chopped small

3 Cups Heavy Cream

1 1/2 Cups Milk

Chives for garnish
