Chicken Salad with Apples, Raisins and Walnuts

Ingredients

3 cups couscous, quinoa, brown rice

8 ozs chicken shredded

1 large apple peeled and diced

1/2 cup raisins

1/3 cup chopped walnuts

3 Tbsp olive oil

2 Tbsp white wine vinegar

1 tsp salt

1/2 tsp fresh ground pepper

1/4 cup parsley chopped


Directions

To a large bowl, add couscous, chicken, apple, raisins and walnuts. Stir to combine. Add olive oil, white wine vinegar, salt and pepper and stir thoroughly. Top with parsley and stir lightly, just enough to incorporate into the salad. Serve cold or at room temperature.
