Chicken Salad with Thai Dressing

Ingredients

2 teaspoon Canola Oil

4 Chicken breasts

8 cup Lettuce shredded

1 large Cucumber peeled, halved, sliced

4 Radishes halved, thinly sliced

3 Green onion thinly sliced

1/4 cup Mint

1/4 cup Cilantro

Dressing

1/4 cup Lime Juice

2 tablespoon Fish sauce

1 1/2 teaspoon Chili paste

3/4 teaspoon Sugar


Directions

Heat oil in large skillet over medium-high heat until hot. Add chicken; cook 8-10 minutes or until browned and no longer pink in center, turning once. Place on cutting board. Cool slightly, slice. Place in medium bowl. In small bowl, stir together all dressing ingredients. Drizzle chicken with 1/4 cup of the dressing; toss to coat. Pile lettuce on 4 plates; top with chicken and all remaining ingredients. Drizzle with remaining dressing.
