Chicken Soup with Rice & Roasted Lemons

Ingredients

1 Cup Basmati Rice or your choice

1 3/4 Cup Water w/zest from one Lemon

2 Lemons zested

3 Shallots sliced

2 Lemons sliced

Onions diced

Celery diced

Carrots diced

6 cups Chicken Stock

2 cups Shredded Chicken (trader joes)


Directions

BRING RICE, WATER& LEMON ZEST &1/4 TSP SALT TO BOIL. STIR ONCE, REDUCE HEAT TO LOW, AND COVER?15MIN. REMOVE FROM HEAT &LET STAND?FLUFF WITH FORK. HEAT OIL. ADD CELERY, ONION & CARROT - SAUTE 2 MINUTES. ADD THE STOCK & BRING TO SIMMER OVER MED HEAT. COOK - 5 MIN. STIR IN COOKED RICE, CHICKEN, LEMONS AND SHALLOTS. REMOVE FROM HEAT..SEASON WITH SALT & PEPPER. GARNISH WITH FRESH HERBS?PARSLEY OR DILL.. ENJOY!
