1 cup water
1/2 cup quinoa rinsed and drained
1 medium (about 8 oz) sweet potato peeled and cut into 1/2
4 teaspoons canola oil
12 oz boneless skinless chicken breast cut into 1/2" pieces
1 medium onion chopped
1 Jalapeno pepper finely chopped
1 medium red bell pepper chopped
1 clove garlic minced
1 teaspoon ground cumin
1 cup frozen peas
3 tablespoons chopped fresh cilantro
1/4 teaspoon salt
1/8 teaspoon black pepper
Don't cook the sweet potato too long or it gets really mushy and will not stay in pretty chucks.
lisamichellemcclanahanVery tasty. So fun eating something that tasts really good and is so good for you. Not quick, but reheats well. Need to make more next time - it went fast. I used chicken tenders and they seemed slightly dry to me. A lot of liquid came out of them during stir fry - maybe my pan was not hot enough. I plan to try coating with some oil and using a tabletop grill to cook the chicken rather than stir fry next time.
