Chicken tortilla soup

Directions

Either roast 2 chicken breasts, or use rotesorie chicken, shredded. Heat olive oil in Dutch oven, put onions, garlic and red pepper and sauté. Add chicken broth, chicken, beans, tomatoes, green chiles, corn and tomato paste. Add cumin, chili powder, garlic powder and salt. Mix corn meal into a small amount of water, add to pot. Simmer on low for 30 mins. Check seasoning, add more cumin and chili powder if needed. You could also add some crushed red pepper or hot sauce to taste. Top with avocados, green onions, and grated cheddar cheese and Crumbled tortilla chips as desired.
