Directions

Pre heat oven to 400 degrees. Marinate chicken in olive oil, lemon zest salt, Pepper, paprika, garlic. Stuff lemon zest and herbs if desired , under chicken skin. Heat 2 tablespoons olive oil in pan:place chicken skin side down, and weigh chicken down with weight. Cook over medium high heat for 10 min, or less,. Then cook in oven weighted for about 15 min. Take out and. Turn chicken overlook for about 15 min. Chicken should read 160 degrees on thermometer.
