Chicken Wild Rice Casserole

Ingredients

2 6.2-oz pkgs fat cooking long grain wild rice mix

1/4 cup butter

4 celery ribs chopped

5 cups chopped cooked chicken

2 cans cream mushroom soup

1 cup milk

1/2 tsp pepper

2 medium onions chopped

2 8-oz cans water chestnuts drained

4 cups shredded cheddar cheese divided

2 8-oz containers Sour cream

1/2 tsp salt

1/2 cup soft bread crumbs


Directions

Prepare rice, set aside. Sauté onion, celery, and water chestnuts in butter. Stir in rice, chicken, 3 C cheese, soup, sour cream, milk, salt and pepper. Spread in lightly greased casserole dish. Top with breadcrumbs. Bake at 350 for 30 mins. Sprinkle with remaining 1 C cheese and bake 5 more mins. Can freeze up to 1 month. Let stand at room temp for 1 hour. Bake covered for 30 mins, uncover, and bake for 55 more mins. Sprinkle with cheese.
