Directions

Simply combine the ingredients in a bowl using a whisk to eliminate any lumps and form a smooth batter. Leave for at least 30 minutes, but preferably longer, or even overnight. If you want a sweet batter you can add some vanilla extract, otherwise you can add herbs or spices. Then preheat a frying pan with a little coconut oil and pour 1/3 of the batter into the pan. Cook for a few minutes, then flip and cook on the other side. Repeat for the rest of the batter and enjoy!
