CHILI CORNBREAD CASSEROLE (18)

Simple preparation but the cheese in the cornbread with the chili makes for a great meal!

Ingredients

1 pound Ground beef or venison

1 cup Onion chopped

6 cloves Garlic chopped

1 can (16 oz) Tomato sauce

1 can (16 oz) Pinto beans drained

1 can (16 oz) Chili beans undrained

1 can (4.5 oz) Green chilies undrained

1 tablespoon Chili powder

1 1/2 teaspoon Cumin ground

1 teaspoon Oregano dried

1 package Jiffy cornbread mix

1 cup Cheddar grated


Directions

- Oven to 400 - Saute first 3 ingredients until beef is done - Combine beef with remaining ingredients except cornbread mixture - Pour into a 2 qt. baking dish - Prepare cornbread according to package directions, adding grated cheddar cheese - Pour over beef mixture - Bake 30 mins.

I used white and red kidney beans, because that's what I had. This turned out great, will make again.

I cheated and used Hormel chili. One can each bean and no bean. And spiced it up with a packet of chili mix. Topped with jiffy corn bread, was a great meal.
