Peel and chop 1 cup of onion. Peel and finely chop the garlic. In a 3 quart sauce pan, cook beef, onion and garlic over medium heat 8 to 10 mins, stirring occasionally, until beef is thoroughly cooked. Place a strainer or colander in the sink. Line with double thickness of paper towels. Pour beef mixture into the strainer to drain. Return beef mixture to saucepan. Into the beef, stir the chili powder, oregano, cumin, salt, pepper sauce and tomatoes with liquid. Heat mixture to a boil over high heat. Once mixture is boiling, reduce heat so mixture bubbles gently. Cover with lid cook 1 hr, stirring occasionally. Stir in beans with liquid. Heat to a boil over high heat. Once mixture is boiling reduce heat so mixture bubbles gently. Cook uncovered about 20 mins, stirring occasionally, until desired thickness.
