Choc. Chip Ginger Cookies, 1/4 Recipe

Ingredients

8 ounces butter softened

2 ounces Fresh Ginger Root grated

7 ounces brown sugar

10 ounces Molasses

1 1/2 teaspoons Salt

1 1/2 teaspoons baking soda

1 1/2 tablespoons Boiling Water

16 1/4 ounces Flour

2 1/4 teaspoons ground ginger

2 1/4 teaspoons Cinnamon

1/2 teaspoon cloves

1/2 teaspoon nutmeg

3/4 ounce cocoa

16 ounces semisweet chocolate chips


Directions

Cream butter, brown sugar, grated ginger and molasses until fluffy.Mix flour, cocoa, salt and spices and set aside.Combine boiling water and soda and mix into creamed mixture.Add flour mixture to butter mixture and mix for 2 minutes.Add chocolate chips.Drop by tablespoon onto parchment lined cookie sheet. Roll in sugar. Flatten with your fingers and sprinkle with sugar. Bake at 325 in a convection oven for 11 to 14 minutes. 350 in a conventional oven. It's just guesswork trying to bake them correctly since the dough is dark. I would go with slightly underbaking them.
