Chocolate covered coconut milk ice cream bars

Ingredients

2 medium bananas

3 tablespoons peanut butter

1/2 teaspoon vanilla extract

1/4 cup coconut milk

1/4 cup coconut oil melted

1/4 cup Peanut butter

2 tablespoons raw cacao powder

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1 tablespoon honey (or maple syrup)


Directions

1. Blend first 4 ingredients & pour into block molds. Place in freezer for at least 3 hours or overnight. 2. To make the chocolate layer, melt coconut oil, peanut butter, cacao, vanilla, salt & honey together in a bowl until combined. 3. Dip each ice cream bar into the chocolate mixture, giving it a generous coat. *Optional: may add rice crispies, almonds, sprinkles, etc into the chocolate mixture before dipping.
