Chocolate mousse

Ingredients

8 ounces Bittersweet Chocolate

2 tablespoons Cocoa powder

5 tablespoons Water

1 teaspoon instant expresso

1 tablespoon Brandy

2 Eggs separated

1/8 teaspoon Kosher Salt

1 teaspoon sugar 1/2 and 1/2


Directions

Melt chocolate over double boiler. Combine cocoa, water, expresso and brandy. Separate eggs. Mix yolks with salt and 1/2 tea sugar. combine with cocoa mix. Whip egg whites, half way through add sugar, until you get soft peaks. Fold into chocolate mix and put in frig for a few hours.
