Cilantro-Lime-Marinated Steaks

Ingredients

Marinade

1/2 cup Cilantro

1/2 cup Lime juice

1/4 cup Olive oil

1 tablespoon Grated lime peel

1 tablespoon Garlic minced

2 teaspoon Kosher salt

1 teaspoon Ground cumin

1 teaspoon Dried oregano

1 teaspoon Ground pepper

4 Boneless beef chuck-eye steaks

Cilantro Spread

1 cup Cilantro chopped

3 tablespoon Olive oil

1 tablespoon Lime Juice

1 clove Garlic

1 teaspoon Jalapeno peppers seeded, finely chopped

1/2 teaspoon Ground cumin

1/2 teaspoon Dried sage

1/2 teaspoon Kosher Salt


Directions

Place all marinate ingredients in blender; blend until smooth. Place steaks on 1 gallon resealable plastic bag; pour in marinade. Seal bag; turn to coat steaks. Refrigerate at least 12 hours or up to 24 hours, turning occasionally. When ready to grill, place all cilantro spread ingredients in food processor or blender; pulse until paste forms. Place in small bowl. Heat grill. Remove steaks from marinade; discard marinade. Pat steaks dry. Place on gas grill over medium heat or on charcoal grill 4-6 inches from medium coals; cover grill. Grill 10-14 minutes for medium-rare, turning once. Place on platter, cover loosely with foil. Let stand 5 minutes. Spread staks with cilantro mixture.
