Notes bread flour with high protien content absorb make sure to adjust by adding flour if it is too wet or liquid if it is too dry, knead dough until elastic.

Coco Pancho Buns

8 cups bread flour

8 cups all purpose flour

1 1/4 tbsp salt

4 tbsp active yeast

2 tbsp bread improver

2 tbsp baking powder

2 tbsp yeast

2 cups sugar

1/2 cup warm milk

2 cups milk

8 large eggs beaten

8 eggyolks

2 1/2 cups butter

2 cups dessicated coconut

Egg yellow food color

Extra flour for dusting

Filling

2 1/2 cups butter

2 cups condense milk

2 1/2 cups sugar

1 cup evaported milk

7 cups dessicated coconut

1 tbsp vanilla

Egg yellow food color


Directions

Directions Dissolve 1 1/4 tbsp sugar and yeast in warm milk and allow to stand until foamy about 10 minutes. Mix dry ingredients Make a well in the center of the flour mixture, add eggs, egg yolks yeast mixture, milk and butter. Knead dough for 10 minutes and place in a grease bowl covered with damp cheese cloth. allow to rise 1 1/2 -2 hours will do. Punch dough in the center and transfer in floured work surface. Roll dough, put filling and cut 50 grams each. Bake in preheated 350F oven for 20-25 minutes
