Coconut Cream Pie (Easy)

This is a quick and easy pie for the holidays. You can top it with your favorite topping and some toasted coconut.

Ingredients

2 package (3.4 oz.) Pudding, Coconut Cream, Instant Jell-O Brand

2 3/4 cups Milk

1 (9") ready-to-use (6 oz.) Pie crust, Shortbread, Keebler Brand

2 cups Cool Whip Whipped Topping thawed

1/4 cup Coconut shredded (optional)


Directions

In a medium-size mixing bowl, beat the pudding mix and milk with a whisk for 2 minutes. Pudding will be soft-set in 5 minutes. Pour into 9-inch ready-to-use shortbread pie crust. Refrigerate for 15 minutes or until firm. Place the coconut into a small saucepan over medium-low heat. Stirring constantly, allow the coconut to brown a little or to your liking. Top the pie with Cool Whip and sprinkle with the toasted coconut. Store in the refrigerator.
