Coconut Macaroons

Ingredients

2 2/3 cups sweetened coconut flaked

1 cup Granulated sugar

2 Eggs well beaten

2 teaspoons Almond extract

1 dash Salt


Directions

Preheat oven to 350 degrees. Line cookie sheets with parchment paper or spray them with vegetable oil spray. Combine coconut and sugar in a medium size mixing bowl. Blend egg and almond extract into coconut mixture. Let mixture stand for about 5 minutes. Drop by teaspoonfuls onto cookie sheets. Bake for about 20 minutes or until golden brown. When done, allow to cool just slightly and then transfer them to a plate or platter to finish cooling
