Coconut Salmon

Ingredients

1 pound salmon boned and skinned, cut into 2x1/2 inch pieces

1 cup flour

2 cups beer batter

2 cups Coconut shredded, sweetened

2 teaspoons Vegetable oil batter recipe

2 ea eggs batter recipe

3/4 teaspoon salt batter recipe

1 dash Black pepper batter recipe

1 1/2 teaspoon Garlic powder batter recipe

2 3/4 cup flour batter recipe

3/4 cup water


Directions

mix batter ingredients together to desired consistency. dip floured salmon into batter mix, then into shredded coconut, shake off excess coconut. Heat 3 inches of oil to 375° and fry 30-45 seconds until coconut is dark golden brown...don't overcook
