Mix together salsa, coconut milk, red curry paste, lime juice, and salt in your crockpot. Add chicken breasts to crockpot making sure chicken is covered by salsa/coconut milk mixture. Turn crockpot on high for 3-4 hours.
Optional: Before serving, stir in thai basil leaves a let them wilt for about a minute.
Serve on top of brown jasmine rice or mix in some cooked broccoli for some added vegetables.
