3/4 cup Vegan mayo, such as vegenaise
1/4 cup Fresh lemon juice
1 teaspoon Cane sugar
1 teaspoon Salt
1 teaspoon Ground black pepper
1 1/2 bunches Collard greens rinsed, dried and thinly sliced 2 to 3 inches long
1/4 head Green cabbage shredded
1 1/2 Carrots peeled and grated
3 Green onions thinly sliced at an angle
1/3 cup Thompson raisins
A yummy and healthy twist on coleslaw. The raisins add a nice touch of sweetness.
