Corn and Chicken Chowder

Can substitute turkey for chicken, and canned mushrooms for fresh.

Ingredients

4 tablespoons Butter

1 8 oz. Mushrooms, sliced

1/4 cup flour

4 cups 2% Milk

1/2 package Instant mashed potatoes

1 can Chicken broth

1/2 teaspoon Dried thyme

1/2 teaspoon Salt

1/4 teaspoon Pepper

16 oz. Frozen corn

1 1/2 cups Chicken, shredded

3 tablespoons Green onions, chopped


Directions

Melt butter over medium heat. Add mushrooms and sautee. Stir in flour. Add milk, stirring with a whisk. Add warmed chicken and corn. Add remaining ingredients (if using canned mushrooms, reduce to 4 oz. and add now). Simmer for 15 minutes and serve with fresh green onions.
