Ingredients

3 tablespoons butter softened

3 egg whites

8 ounces cream cheese softened

1/2 cup onion finely chopped

1 can whole kernel corn drained

1 can creamed corn

1 box Jiffy Corn Muffin Mix

1/2 teaspoon black pepper

diced red pepper and jalapeno optional


Directions

Whisk butter, egg whites, and cream cheese until combined. Stir in remaining ingredients. Spray an 11 x 7 pan with cooking spray and pour batter into dish. Bake at 375 degrees for 50 minutes.
