Preheat oven to 400 degrees. Stir together all ingredients just until moistened. Spoon batter into greased muffin pans about 1tbsp. Per cup. Bake 15 minutes or until golden brown.
Make ahead note: cool completely, and freeze in zip- top plastic freezer bags up to 1 month. To serve, arrange cornbread rounds on baking sheet and bake at 350 degrees for 5-6 minutes until thoroughly heated.
Topping possibilities: Gorgonzola and apples-- 1 apple and 1 c.gorgonzola crumbles.
