1. Preheat oven to 180 degrees. Grease and line two mini loaf tins
2. Chop half the basil. Combine basil, polenta, flour and baking powder in a large bowl. Make well in center. Add egg, buttermilk, cheese & capsicum, Stir until just combined, Divide mixture evenly between the 2 tins. Bake for 30-40 minutes.
3. Leave loves in tin for 5 minutes before cooling on rack.
