Cornmeal porridge

Ingredients

1 cup Yellow cornmeal

2 cups Water

1 cup Evaporated milk (or coconut milk)

1-2 cups Another milk of choice (eg skim or almond)

1-2 Bay leaves (*essential)

1/2 stick of cinnamon

Pinch of salt

1 teaspoon vanilla essence

Dash of cardamom if desired

1/2 tablespoon sugar (coconut sugar or brown sugar)


Directions

1. Add liquid ingredients and aromatics to sauce pan and bring to boil. 2. Using a wooden spoon, add cornmeal in batches and stirring to avoid lumps. 3. Add sugar. 4. Reduce the heat to low and boil until desired thickness. Add water as needed to adjust thickness. 5. Remove bay leaves and cinnamon stick. 6. Serve hot
