Courgette Chutney

Ingredients

25 g Coriander leaves including stalks

1/2 ts Salt

1 ts Tamarind concentrate or lime juice

60 g Desiccated coconut

315 ml Water

; chopped

1 sm clove garlic peeled

250 g Courgettes washed and

; chopped

1 Fresh green chilli seeded

1 1/2 inch cub root ginger


Directions

Put coconut, courgette and water in a karahi, wok or saucepan and place over a high heat. Bring to the boil, reduce heat to low, cover the pan and simmer for 5 minutes. Add salt and tamarind and stir until tamarind is dissolved. Remove from heat and allow the ingredients to cool. This is a fantastic recipe, obviously a chutney but I used this as marinade for chicken on the bbq as well. Just add some white wine and a little oil. Or mix with yoghurt. Very versatile. A firm favourite with us.
