Couscous salad

Ingredients

1 cup couscous

1 cup sliced red peppers

1 cup sm onions

1 cup chopped scallions

1/2 cup sliced cucumbers

Low fat italian salad dressing


Directions

Heat couscous in frying pan with oil until light brown. Cool Heat red peppers and onions in frying pan with oil til roasted Mix all ingredients together. Mix well and add small amount italian salad dressing. Chill. Serve on bed of lettuce with feta cheese, nits, black olives.
