Ingredients

2 1/4 cup Shortening

2 1/4 cup Sugar

2 1/2 cup Brown sugar

5 Eggs

2 1/2 tsp Vanilla

4 1/2 cup Flour

2 1/4 tsp Baking soda

1 1/8 tsp Baking powder

1 1/8 tsp Salt

4 1/2 cups rolled oats

1 pkg Chocolate chips

1 cup chopped nuts optional


Directions

Cream shortening, sugars, eggs, and vanilla. Sift together flour, baking soda, baking powder, salt, and add to creamed mixture. Mix in rolled oats. When everything is well-mixed, add chocolate chips and nuts. To bake, drop batter with ice cream scoop onto greased cookie sheets, about 6 to a sheet, and bake at 350 degrees until lightly brown on edges and chewy in the middle, about 15 minutes. DO NOT overbake or cookies will be quite tough. *I use a pampered chef medium scoop to drop dough, and bake about 12 minutes. After I take them out of the over, I let them sit a minute or two before I take them off of the cookie sheet.
