Ingredients

1 cup Orange juice

1 cup Granulated sugar

1/2 cup Light brown sugar

12 ounce bag cranberries

1 orange, zest and coarsely chopped fruit

1 lime, zest and coarsely chopped fruit

1 lemon, zest and coarsely chopped fruit

1 teaspoon salt

Black pepper to taste

1/2 crystallized ginger

6 ounces dried apricot coarsely chopped

1 tablespoon Balsamic Vinegar

1/2 teaspoon Sumac

1 tablespoon Pectin Powder


Directions

Add all ingredients except pectin to a pot on medium high heat. Once mixture comes to a boil, add pectin powder, reduce heat to medium low and cook until all cranberries have burst, about another 30 minutes.
