Cranberry Pretzel Sweet Potato Mash (Version 1 - Uses Canned)

Very yummy sweet potato dish. Very sweet, so add less sugar if you like things a little less sweet. Not a low cal or low fat dish.

Ingredients

2 cups Pretzel Rods chopped

1 cup Pecans chopped

1 cup Craisins rehydrated, see note

3/4 cup Brown sugar packed

1 cup Butter melted and divided

2 cans (29 oz) Cut Sweet Potatoes in Light Syrup, drained

5 ounce Evaporated milk

1/4 cup Sugar

1 teaspoon Vanilla pure, not imitation


Directions

Preheat oven to 350 degrees. In large bowl, combine pretzels, pecans, dried cranberries, brown sugar and 1/2 cup butter; set aside. In another large bowl, beat sweet potatoes until smooth. Add milk, sugar, vanilla and remaining butter; beat until well blended. Spoon in to large shallow baking dish (10 x 13). Sprinkle with pretzel mixture. Bake uncovered for 25-30 minutes until the edges are bubbly.
